Hi Chandra! You are correct that any loose ends should be securely woven in - all but one, that is. We leave a 20" tail for the volunteers to use to stitch the squares together. That tail needs to be 'butterflied' and attached to the square so it won't come lose and get tangled in shipping. If you check Packing Slip and Shipping Instructions (in the tabs above) you will find information on how to do this.
When I think of a DK 3 weight yarn, I think of something like a Caron Cake. If that is what you are meaning, then yes, that is just fine :) Any yarn, pattern or technique (knit, crochet, loom knit, or Tunisian Crochet) which creates a fabric that is warm and does not have large holes (I'm thinking lace) is okay.
