Hello Christine, welcome to the forum. When you've had a chance to look around you'd be very welcome to join the UK group or Stitch for Scotland or both.
All you need to worry about with squares is to make them as near as you can to 8" square and as warm as possible. Aran weight is excellent and for that if you were using 5mm needles you would need 34/35 stitches.
British dk acrylic yarn can be bit on the thin side but if the square is textured that would be fine, or if the yarn is used doubled. But don't worry about it too much - everything will be used and appreciated. Any further queries do ask - there is always someone happy to help. I hope you enjoy knitting for such a worthwhile cause.
