Hi Krista, welcome to the forum. I saw your comment under a photo regarding yarn types and really anything can be used. Wool and alpaca are the warmest and the safest if used by people without electricity who cook over open fires but those yarns can be very pricey. Acrlyics and acrylic blends are used by a lot us and as long as you specify what you have used it will all be put to good use.
We try to make the squares reasonably sustantial and I ahve found that if a yarn can be knitted on 5mm needles or a bit bigger (specifications are usually on the band) it will make a good square. In this country yarns tend to be a bit on the thin side so I use them but knit two strands at a time. If you look through the photos section you will see the vast variety that is achieved.
